The cuisine of the restaurant and the Chef!

In summer, discover our selection of Tapas cooked in the Braséro, and in winter, fill your belly with hearty cheese dishes such as raclette, tartiflette, croziflette, fondue and Mont d’Or.

You can also discover Basque cuisine with stuffed piquillos, chipirons, cod à la luzienne, veal axoa, not forgetting the authentic Basque cake with cream, cherry or chocolate and Espelette pepper (the chef’s specialty).

In winter, Northern cuisine will take center stage with traditional dishes such as tarte au Maroilles, carbonnade flamande, welsh, Liège waffles and speculoos tiramisu.

Our chef works with fresh produce selected as much as possible from local producers. Dishes are priced in line with market prices as the seasons change! Our restaurant offers :

  • A seasonal menu with a choice of starters, main courses, daily suggestions and desserts.
  • One or more menus at €25 and €35 per person (starter + main course + dessert). On weekdays, the menu also includes 25cl of wine by the jug and coffee.)

Restaurant with terrace near Loudenvielle (65)

Our restaurant has 2 terraces : one on the stream side and one on the mountain side. In summer, the stream-side terrace is particularly popular, as the air stirred by the small waterfall is often cooler. Late evenings on the wooden terrace, where the stone walls give off all their warmth, are much sweeter!

Christophe Mellier, Chef de l'Auberge de Germ

Meet the Germ's Inn Chef !

Chef Christophe was born in Hautmont, in the Nord region of France, where he began his schooling until the age of 13. He then moved to Bayonne, on the Basque coast, and obtained his CAP and BEP in Saint-Jean-Pied-de-Port.

Cooking then became a real passion, and he seized the opportunity to go to Geneva, Switzerland, for the seasons.

He continued his training there for a year before returning to Saint-Jean-de-Luz, where he learned to make his famous and much-loved Basque cake.

In 2002, he finally settled in the Louron valley, where he brings us his Chti-Basque cuisine.

His family-run inn is itself decorated in the colors of the Basque country, with a warm, cocooning and relaxed atmosphere.
